Melissa has a friend that always tells her shes effing up recipes because she never actually follows them. BUT it works for her. She knows what to do to make something good.

I do not. I need a recipe. I need instructions. I still Google every time I want to boil eggs because I cant just retain information and remember how to make things right.

I wanted to make squash soup. I knew there was squash and curry powder and coconut milk. So I found a recipe and was all ready to go…until I realized there was NO COCONUT MILK IN THE RECIPE. The ones I always used in AL did. Of course I can never find the same one twice.

So I got brave and I effed up this soup recipe.

In a good way.

Here is the original:

INGREDIENTS
1 2-lb butternut squash, peeled, seeded, diced into 1/2-inch to 3/4-inch cubes, yielding about 6 cups of cubed squash (see how to cut and peel a butternut squash)
Olive oil
1 teaspoon butter
Salt
1 large yellow onion, chopped
2 teaspoons yellow curry powder
1 teaspoon whole mustard seeds (if you substitute ground mustard, only use 1/4 teaspoon)
A dash of ground cumin
1 Tbsp minced fresh ginger
4 cups chicken stock
1 teaspoon salt
1/2 cup sour cream (can substitute plain yogurt)
1/4 cup chopped fresh cilantro (can substitute parsley)

First off, I roasted the squash first. Melissa told me to. I usually listen when she tells me how I should cook things.

I measured the curry powder by the palm full. I forgot the cumin (at this point I was tired of looking at the recipe. I used a can of coconut milk, no yogurt/sour cream, and very little (like maybe 1-2c) chicken broth.

I also added chopped up celery with the onions. And garlic. OMG could I stray any more? Im sure I could.

When I added everything together and bizzed the heck out of it with the hand blender it. was. perfect.

I also threw in some dried cilantro flakes in a jar…not fresh :|

And baco’s. The real kind.

And dunked some Kings Hawaiian sweet rolls in it. *drool*

Layla got ham and cheese sammies with her tinniest bowl of soup EVER. I knew she wouldnt touch it and needed her to eat.

I just gave Timmy ham and a roll because I didn’t want to deal with the soup/toddler mess.

I scooped some in a palstic bowl for him 4 different times before Layla gave up on it and gave him hers too.

But I’m LAZY.

So, Im going to choose ONE prompt/theme each week and post a picture on Friday to go with it. I’ll add a button and a link up so anyone that wants to join along with me can. It’s just a way to make you pick up your camera and think out of the box for at least one of your pictures ;) Something other than kids in the living room which I am GOOD at getting stuck on.

Ok, Audrey is a big jerk and had to post a cute chunky shorter haircut on Pinterest and now I’ve got the itch. I’ve had my hair longish with bangs since Dec ’10. That’s like 20 years in Megan Hair Time.

Today was warm. Like mid-high 60s. Now I want short(er) hair.

Harris and Me by Gary Paulsen is hi-lar-i-ous!

It’s a kids chapter book that my 8th grade English teacher read to the class. More for fun at the end of the day than actual education. And it was fun! So much so that when I got into high school I had to find my own copy. Reading it out loud to someone else makes it about 1 million times funnier by the way.

It’s awesome.

It’s about an 11 year old boy that is dropped off to spend the summer with some relatives on a farm. His cousin Harris is “rude and crude and finds trouble at every turn.”

Seriously. I wheeze when I read it.

Harris has an incredible imagination turning piglets into ‘dirty commy japs’.

He is in an ongoing war with a rooster named Ernie…but the part that kills me is the peeing on the electric fence. Omg. So funny.

So that’s that.

Funniest book on the PLANET. Harris and Me. I can’t wait to read it to Layla!

But mostly because I just need to read it again :)

It’s 1030pm. Ok, 1025. I should be getting ready for bed (because I’m 50 and it’s way too late for me) but instead I’m sitting here watching ‘Vintage OTH’, listening to the kids hack in their sleep, and thinking of how to better the blog.

First off let me just say Blogger is steppin it up! Good grief. I get bored pretty fast with the way things look. I have been half searching for a new WordPress Theme (FREE por favor) that I like as much as the one I have now…that has a side column. I want to fit in my fatty pictures but at the same time have all the fun stuff that is currently banished to the bottom of the blog all front and center to the side for everyone to see.

No such luck.

Then I decide to check out some of my favorite blogs to read and see what they use. 98% say BLOGGER at the freakin bottom.

Now that I’ve made the ‘big move’ to WordPress, Blogger has to go get fancy on me. Geeze.

I’m very picky. Finding a theme I like is like choosing a soul mate.

I need a custom header, fatty pictures, side bar, and it all needs to be plug and play. I don’t do well when I have to be techy.

Anywho. There are some things I plan to start up next month like sponsor swaps, give aways, and a weekly link up. Maybe. I also plan to actually participate in OTHER weekly link up stuff more often. Mostly photo stuff I’m sure but my friend Jessica over at Sweet Green Tangerine does a pretty fun Book Chat every Thursday! Each week there is a new book related topic to blog about then link back up with so everyone’s blogs are all in one happy place. Love it! Except it turns out I don’t read as often as I thought and I don’t so much like typing unless it’s 1034pm and I should be asleep. And even then I just tend to ramble.

BUT, this week is fun. This week’s topic is Funniest Book or Character. I totally know what I’m going to post about already. Finally one I can actually feel like I know anything about!

So yeah. I have a million (not really) page hits and like 2 commenters (Hi Mom!). Thinking of ways to get this old blog running and more interactive. Not so much just me photo dumping. But who knows what will happen fo sho. Just keep in mind that I have PLANS for April! Big ones. And I’m pretty sure I will actually follow through.

Thankfully they’re not destructive…just active :) And super cute.

Anywho, I ended up getting the quilt pack with the cars.

And omg Im so over cutting squares already.

There are 24 different fabrics. Well, 8 I guess but each came in 3 different colors if that makes any sense.

One day I’ll finish cutting and actually get to sew!

**Directions**

From Camp Humphreys main gate:

Go straight down main road until the road Ts and take a left

Take a left a the next light onto 45.

Exit onto 38 to the right after you go under the underpass (You want to be going away from Lotte Mart)

 Stay on this road for a few miles. You will see signs for 45.

Exit to the right onto 45. You should see a hospital right after u get on.

Exit to the right when u see Emart. Stay in the right lane.

Right after you exit you should see a bridge on the right that goes over the train tracks.

Once you go over this bridge you will see signs for Happy Quilt.

Lots of small things in lots of boxes! Our stuff FINALLY came!

This week on Thursday Adventures with Niki we found ourselves searching for Happy Quilt. The big fabric store that everyone goes to. Turns out if you go the way that we went last time that we didnt MEAN to go you end up at Emart (another place we were wondering about) and Happy Quilt. Take some exits, theres a hospital, a bridge, and voila!

And here is where I should be posting pictures of the awesomeness that was inside of Happy Quilt…but I didnt even take out my camera. I was in awe. SO MUCH FABRIC omg. So much. It was fantastic!

After picking up and putting back about 20 different fabrics I chose 3 packs to buy. I dont even have a sewing machine here yet and zero projects in mind so fabric shopping was pretty dumb and random. But I love it.

I was *this close* to buying a whole stack of super cute boyish pre cut squares in 3 or 4 coordinating fabrics tied together with a string. All I had to do was sew it together to have a quilt. It was 30,000 won though ($30ish) and I just couldn’t do it! Next time…next time..

After Happy Quilt we drove circles around Pyeongtaek (again no pictures. Fail.) looking for the entrance to a friend’s apartment building. We could SEE the building but couldn’t figure out how to get to it and when we called she had no clue where we were and how to tell us. Finally we backtracked a bit and made our way in. And then I bought the Bridesmaids dvd from her. That movie is wonderful. She even took won because that’s all the money I had :P

Finally, a commissary run. It’s a Thursday thing for Niki and I think even after I get my own car I’m going to go with her because shopping is just more fun with a buddy. Especially when said buddy has a baby for Timmy to be entertained by too. Win win.

It was a good day. Now I’m going to watch Game of Thrones because Thomas made me watch the first episode which means I need to see THEM ALL. Right now. Totally sucked in.

Anyway, I want to catch yall up on what’s been going on around here. And thats not really a lot.

Feb 26 was my birthday! 26 on the 26th. Im on the fast downhill ride to 30 now :| Ick

Anywho, it was a great day. Lots of family time, we had Chilis for lunch (Helloooo Chicken Ranch Sammich. It’s been too long.) Good times. The best time though was right before bed I hit the ‘submit’ button to get THIS baby!

I made the easy peasy 2 ingredient pumpkin muffins that I’ve blogged about a trillion times the other day. Can of pumpkin, box of spice cake mix, 350* for 25ish min or until theyre done. But THIS time I got crazy with the minis I made. Before I baked them I put a tiny dollop of Nutella on top and swirled it a bit. Self frosting pumpkin muffins. Oh. My. God. Amazing. I think Timmy ate almost every mini one I made.

Timmy and I walk up to the bus stop every afternoon to get Layla off of the bus. I finally figured out how to get him on my back with the Ergo and its 1000 times more comfy than the front. And he finally loves it too. Thank you Dora for the ‘backpack backpack YAY!” song because THAT is what makes Timmy excited. He’s my backpack.

Last week was Dr Seuss week at L’s school. Each day had a different dress up theme.

Also, yesterday was my first skate practice with the derby girls here. I had a blast!

I wasnt too great but definitely was better by the end. I can’t wait for next week!

It felt good to get out and skate somewhere other than the hallway/livingroom. Hooray for warmer weather. Lets hope it sticks around.

Something I do NOT have pictures from (doh!) is my weekly trips out with my friend Niki. SO thankful that I had her here waiting for me :) We didnt get to hang out much at Rucker but Im glad to have her here. Shes crazy fun and her kid is ah-maz-ing. Timmy loves her too. And she has this evil little laugh that we looooove!

Anyway, next adventure is to find Happy Quilt. It’s a fabric store that I hear is decent priced. Excited :D

Now I need my sewing machine to come. And my bed and jogging stroller and everything else we shipped :| If it’s not here this week I may curl into a ball and die. Maybe.
